Peanut Butter Blondies - Vegan Cookies Invade Your Cookie Jar

This is a review of the recipe for Peanut Butter Blondies from Vegan Cookies Invade Your Cookie Jar.  First off, I'm not transcribing the recipe in this post, but you can find it here.

I decided to make these in mini muffin tins.  That was the only change I made to the recipe.  They look great (aside from that sinking middle thing), and the insides appear just as in the book's photo.  But they were incredibly greasy.  Not just a little oily, but they left a small puddle of oil in each pan cavity (and I did not spray the liners with oil in case you're wondering.)

They taste wonderful, though, and I would definitely make them again.  With about half as much oil.
