Peanut-Giner-Sesame Cookies - Veganomicon
I finally tried making the Peanut-Ginger-Sesame Cookies from Veganomicon, and they were wonderful! I made them when the whole family had gotten a stomach bug and weren't in the mood for regular cookies/brownies/etc. These were really light (for cookies) and delicious.
I tried them with the tops totally rolled in sesame seeds, with no sesame seeds at all, and also just sprinkling a little bit on top. Totally rolled was definitely the best. However, I did leave out the candied ginger...I didn't have it in the cupboard and we were too sick to go to the store for it.

Skillet Cornbread - Veganomicon
I have made Skillet Cornbread from Veganomicon many times. You can find the basic recipe here. This was written before it made it into the cookbook so it doesn't say anything about a skillet - if you use one make it cast iron.
Of all the cornbread recipes I have tried, it is my favorite. It's alright in a *small* glass dish (I like thick cornbread!) but I always make at least 12 mini cornbread muffins as well. My daughter loves to take them to school as a snack or part of her lunch.
And my 2 year old wanted to set up a shot with her half eaten mini muffin =)

Herb Drop Biscuits - Taste of Home
I got a copy of Taste of Home magazine a couple weeks ago, and I've clipped out several recipes to try. This is the second one I've made & so far this magazine is 2 for 2. These Herb Drop Biscuits were great! I didn't drop them onto the parchment paper. They were dry enough that I could roll them with my hands (required a little squishing to get them more into a ball) and then I flattened them a bit, too.

Pecan Cinnamon Rolls - Breakthrough Blending
These Pecan Cinnamon Rolls from Breakthrough Blending looked wonderful! However, they fell pretty flat taste-wise. I do think the pecan addition is a great idea and I will probably try it with another roll recipe in the future.

Dutch Baked Pancake w/Strawberry Almond Compote & Scrambled Tofu - Taste of Home & Vegan with a Vengeance
I have made the scrambled tofu from Vegan With a Vengeance many times before, and I love it. So obviously that gets two thumbs up. It's a really versatile recipe!
This was my first time making a baked pancake, but after I saw the picture in Taste of Home magazine I had to try it. I only had to substitute the eggs for flax meal + water (it calls for 4 eggs so I'm pretty sure this changes the consistency of the dish but you do what you gotta do, eh?) It was wonderful! Kinda gooey on the inside, real crisp at the outer edges. The compote was really good & simple as well. My children, however, did not like this pancake at all.
Edamame was a pretty good accompaniment.

Peanut Butter Blondies - Vegan Cookies Invade Your Cookie Jar
This is a review of the recipe for Peanut Butter Blondies from Vegan Cookies Invade Your Cookie Jar. First off, I'm not transcribing the recipe in this post, but you can find it here.
I decided to make these in mini muffin tins. That was the only change I made to the recipe. They look great (aside from that sinking middle thing), and the insides appear just as in the book's photo. But they were incredibly greasy. Not just a little oily, but they left a small puddle of oil in each pan cavity (and I did not spray the liners with oil in case you're wondering.)
They taste wonderful, though, and I would definitely make them again. With about half as much oil.
