I have made Skillet Cornbread from Veganomicon many times. You can find the basic recipe here. This was written before it made it into the cookbook so it doesn't say anything about a skillet - if you use one make it cast iron.
Of all the cornbread recipes I have tried, it is my favorite. It's alright in a *small* glass dish (I like thick cornbread!) but I always make at least 12 mini cornbread muffins as well. My daughter loves to take them to school as a snack or part of her lunch.
And my 2 year old wanted to set up a shot with her half eaten mini muffin =)
